The Wüsthof Classic Ikon White Santoku 17 cm is a traditional small Japanese chef's knife with a decent cream-coloured German design. The word Santoku means: three qualities. According to some, this refers to the cutting, crushing and scooping qualities that the santoku is known for. Others say it stands for meat, fish and vegetables. The three ingredients that can easily be cut with a santoku. All we know is that a santoku is an incredibly versatile kitchen knife that is perfect when cutting, crushing and scooping meat, fish and vegetables.
The blade
Like with other Wüsthof collections the blade is made from X50CrMoV15 steel, which was sharpened according to the PEtec method, and polished by hand. This type of steel is also easy to sharpen.
Another advantage of this blade is the crop. It doesn’t extend all the way to the edge, but does separate the handle from the blade. As such you not only keep your fingers safe, you can also use the entire edge. Also great when you want to sharpen the knife.
The handle
The handle is made from rock-solid POM. This is a shock, heat and acid proof material you can easily clean. Perfect for kitchen knives. The steel of the blade seamlessly merges with the handle. This is not only a rock-solid connection; it also provides great balance. Combined with the ergonomic shape this knife feels amazing in hand.
Wüsthof Classic Ikon
