Traditional Bulgarian appetizer. It is interesting that in Bulgaria this dish is prepared exclusively on the street in special large containers called "chushkopek" (from the Bulgarian name for pepper - chushka). Luthenitsa recipes in every family are passed down from generation to generation.
For lutenitsa, a special type of red pepper with a fleshy structure is used. Peppers and eggplants are fired in an oven at a temperature of 700 ° C, caramelizing inside. The vegetables, peeled after baking, enter a vacuum unit, where they simmer for some time to obtain a creamy consistency.
